Dan Miron

Brand Chef

A student of British chef Jason Atherton. After spending two years working at Atherton’s restaurants in Singapore (Esquina, Pollen, The Study), Dan honed his skills under Gaggan Anand at his restaurant Gaggan in Bangkok.

Upon returning to Moscow, Dan Miron launched Holy Fox and Margarita Bistro.

“The formula of our menu remains the same: we choose good ingredients, cook them with maximum knowledge and love, and then add a little wit, boldness and provocation,” says Chef Dan Miron.

Maxim Gorelik

Head Bartender

Maxim has been in the industry for 10 years. He began his career in Krasnoyarsk (2011–2012), then worked in bars in St Petersburg (2013) with the future founders of Imbibe.

In 2014, he moved to Moscow and worked at one of the first speakeasies in Russia, Jack Rose. He then joined the team at Bruce Lee Bar (formerly Belka Bar), where six months later, at the age of 22, he became Bar Manager.

In 2016, he gained experience in bar consulting, and in early 2017 joined the opening team of Cevicheria.

In mid-2017, he received an offer to open the new Margarita Bistro project as Bar Manager. A year later, he opened Lucky Izakaya Bar, followed by Eva and Loro, after which he became Head Bartender of the newly established Lucky Group restaurant group.

Dmitry Kipelkin

Head Sommelier

Dmitry has worked as a sommelier since 2007. He completed courses in Germany and Burgundy (Ecole de Bourgogne). He worked as Head Sommelier at Selfie, part of WRF.

He creates wine lists across all segments and helps guests navigate them. He loves wine at every stage, from the vine to the glass. He values the opportunity to experience the art of talented winemakers.

Polina Komukhina

Head Sommelier

Polina began her journey into the world of wine in 2015. She studied at the St Petersburg Wine Academy and Enotria school, and later continued her education in Austria.

Travel across the world’s leading wine regions, living in Burgundy and taking part in creating her own barrel of wine played a significant role in her professional development.

Today, Polina continues to deepen her knowledge by visiting leading wineries and international exhibitions. She is particularly interested in wines with a distinctive terroir character and in the stories of the people who create each bottle. Polina’s main goal is to help guests discover new regions, styles and labels, turning their introduction to wine into an engaging and inspiring journey.

Yuri Shaiditsky

Bar Manager

Yuri joined Lucky Group during the opening of Niki at the Khudozhestvenny cinema. Over five years, he worked his way up from Bartender to Bar Manager, representing the company at an international guest shift at the legendary The Old Man in Hong Kong (ex The World’s 50 Best Bars), speaking at the Bar Hub festival and at Institut Lyfe’s Higher School of Gastronomy.

In addition to developing the bar programme, Yuri was involved in organising events and catering projects at the Khudozhestvenny cinema.

In his work, he values honesty, discipline, respect for the profession and a constant desire to develop. Among his personal sources of inspiration are the films of Ernst Lubitsch.
